03. David Grutman | How Biohacking Helped Build a Global Hospitality Empire
Beyond Mere Politeness — The Art of True Civility
It often seems like we live in a very inconsiderate, indifferent, and ill-mannered time and that the cure for what ails our abrasive and disjointed relations is a lot more politeness. But my guest would say that what we really need is a revival of civility.
Today on the show, Alexandra Hudson — author of The Soul of Civility: Timeless Principles to Heal Society and Ourselves — explains the difference between politeness and civility, and how being civil can actually require being impolite. We discuss how civility ensures the health of democracy, and good government relies on citizens' ability to govern themselves and check each other, which may require acting a little like . . . Larry David. We talk about what Homer's Odyssey can teach us about the art of hospitality, the relationship between civility and integrity, and more.

Unreasonable Hospitality with Will Guidara
If you walk up to someone and say “you’re being unreasonable!” most people would be offended. Will Guidara, however, would take it as a compliment.
A renowned New York restaurateur, Will transformed Eleven Madison Park into the best restaurant in the world by reinventing how they offered hospitality....they made it unreasonable.
I had a chance to sit down and talk to him about how he learned the power of being unreasonable.
This is… A Bit of Optimism.

Rapid Response: Danny Meyer, 10 weeks later: How to revive restaurants
"Being the first to close is one thing. But I don't want to be the last to open,” says iconic restaurateur Danny Meyer in his second Rapid Response interview. After shutting his iconic New York City restaurants, laying off 2,000 staffers (with hopes to re-hire) and returning a $10m PPP, Danny finds himself reconsidering nearly everything about his business model. Even before the coronavirus lockdown, the restaurant industry had a slew of “preexisting conditions,” Danny says. Now those weaknesses have become exposed, putting at risk the future of hospitality — one of America’s core industries. Danny’s Union Square Hospitality Group is reimagining what and HOW their restaurants serve; rethinking how they generate revenue; and exploring new cost structures, like a bold new relationship with landlords. It’s all in the hopes, says Danny, of getting back to business, with customers safely at their tables, and the teams back together. Interviewed by editor Bob Safian.

Rapid Response: Inside Panera’s pandemic pivot, with CEO Niren Chaudhary
What do you do when you can’t serve customers in cafes and carry on business as usual? You try unusual things, says Panera CEO Niren Chaudhary. Forced to close cafes and restructure teams, Panera is leveraging its advantages (like a robust e-commerce system) to launch a slew of initiatives, from Panera Grocery to contactless delivery to Together Without Hunger, providing 500,000 meals to food banks across the U.S. It’s not the same Panera, says Chaudhary, but a Panera that will make it into the post-pandemic world. Interviewed by editor Bob Safian.

#320: The Art of Hospitality: An Interview With Entrepreneur and Hotelier Liz Lambert
Liz Lambert (@thelizlambert) first purchased a seedy motel on South Congress Avenue 23 years ago, and she transformed it into Hotel San José, which has become known today as the quintessential "Austin" hotel. The success of Hotel San José, which sparked a revitalization in the city's now thriving South Congress district, led her to launch Bunkhouse Group, a hospitality company founded on the pillars of design, music, and community-driven experiences.
In the course of chronicling her experiences with the residents of Hotel San José on video camera, she ended up making the Last Days of the San José, a documentary that casts a fascinating light on human relationships in gentrification and urban renewal. You can check out the trailer here, click here to be notified when streaming becomes available, or get a copy of the DVD here.
