He is known for his bold cooking rooted in Asian flavors and techniques, bringing over 25 years of experience that has taken him from three-star kitchens in Europe to street food stalls in Thailand. In 2010, Angelo competed on season 7 of Bravo's hit show, "Top Chef," and later, "Top Chef All-Stars," quickly becoming a fan favorite. He was then drawn in to Philadelphia’s Fork by award-winning restaurateur Ellen Yin, and began overseeing the kitchens at Fork, a.kitchen and a.bar, and High Street Market, as well as expansion to NYC, when his path greatly changed in 2015 as he was involved in a tragic incident while commuting between Philadelphia and NYC — an Amtrak accident where he endured a spinal cord injury. Despite his ability to no longer cook, he has stayed involved in the kitchen in various ways with his award-winning restaurant group, and is thriving with his podcasts and more. Being diagnosed as a child with keratoconus, a disorder of the eye that results in progressive thinning of the cornea, you would think the last thing she would be doing is chopping up vegetables with a large, sharp knife.

    While recovering at home after a third cornea transplant, Tanya’s husband suggested they register to operate a food business from home. She wasn’t going to let her eyesight be a problem. She has learnt to adapt by relying on her other senses to get by, and she organises her kitchen in a way that she knows by memory where everything is.

    When Tanya stumbled across the recipes of Cynthia Louise, a well-known whole food chef specialising in vegan dishes, she was inspired to make her new business venture plant-based, despite not being vegan herself.

    YAKINIQUEST was opened in 2014 in Boat Quay, Singapore by husband-and-wife duo Suguru Ishida and his wife, Tomoko, to showcase the highlights of their yakiniku chronicles.

    Origins of the  restaurant can be traced back to nearly two decades ago in Tokyo, Japan, when Mr and Mrs Ishida and their three friends – with a sole mission to uncover and document some of the most exquisite yakiniku dining experiences across the country.

    Suguru is not a trained chef. Instead, the  self-taught yakiniku expert draws from his personal experiments with various meat grilling techniques. 

    Adrian Abraham speaks to Suguru about the inspiration behind his yakiniku chronicles, why he decided to open the restaurant in Singapore and what's been the highlight about owning a business with his wife.
